Chocolate Conching Machine Overview
A chocolate conching machine is a core piece of equipment in the “grinding-refining” stage of a chocolate production line. It further grinds and homogenizes the mixed chocolate liquor (cocoa mass, powdered sugar, cocoa butter, milk powder, etc.) to achieve a smooth, melt-in-your-mouth texture in the finished product.
A chocolate conching machine utilizes mechanical shearing, rolling, or ball milling principles to continuously and finely grind the chocolate liquor. By continuously reducing the solid particles (mainly cocoa and sugar) to approximately 20-25 μm, and simultaneously performing deodorization, dehydration, and emulsification, the machine imparts a smooth, glossy finish, good flowability, and a stable shelf life to the chocolate. It is an indispensable piece of equipment in a chocolate production line.

Components of a Chocolate Conching Machine
1. Cylinder: The cylinder holds and grinds the chocolate liquor. It is typically made of food-grade stainless steel, with a smooth inner wall and even heating, ensuring material hygiene and safety while facilitating cleaning and long-term use.
2. Motor: The motor provides stirring and tumbling power to the conching machine. It drives the cylinder or stirring shaft via a belt or reducer, allowing for stable operation over extended periods. The speed can be adjusted according to process requirements.
3. Inlet: The inlet is usually located at the top or upper side of the cylinder. It is used to add cocoa liquor, sugar powder, milk powder, etc. Its design facilitates feeding and prevents splashing. Some models are equipped with a feeding cover or safety lock.
4. Outlet: The outlet is usually located at the bottom or lower side of the cylinder. It discharges the ground chocolate liquor via a valve or tilting mechanism. The flow rate can be controlled, facilitating connection to subsequent equipment such as pumps, storage tanks, or temperature controllers.
